Bourbon is the American branch of that family: it must be made in the United States from a grain mix of at least 51% corn, distilled no higher than 160 proof, and aged in brand-new charred oak barrels, with nothing added but water.
Those rules are what you taste. The corn and the fresh charred oak give bourbon its sweeter, rounder character — vanilla, caramel, baking spice and toasted wood. Scotch and other malt whiskies, aged in casks that have already given up much of their sweetness, tend to be drier and more layered, showing malt, orchard fruit, honey, and sometimes the peat smoke associated with Islay. Even the spelling follows the divide: Scotland, Japan and most of Europe write “whisky”, while the United States and Ireland write “whiskey” — so bourbon is, strictly speaking, a whiskey.
